I must admit, this guy really knows how to put the steps to the music.
Makes me wish I had spent the 10 years it would take to learn to do this,
just so I could walk sideways through the office doing this.

I don't know, man... My dance partner is 53, and she does a one hour
rock & roll dance class once a week. I don't know if you know this, but
rock & roll is pretty damned energetic dance style. ;-)
(Plus we often go out together on Saturday night and dance rock & roll
from 8pm until gone midnight. Plus she also does 1 hour of Ballroom &
Latin per week, 1 hour of line dance, and she goes rock climbing twice a
week... I keep trying to tell people she's frigging *hardcore*, but they
all seem to think I'm just being enthusiastic or something...)

Classes:
1 hour rock & roll
1 hour ballroom dance
1 hour latin dance
1 hour line dance
PLUS rock climbing 2x a week
PLUS over 4 hours of dance with you.
Does she also run the Ironman?
Anyway, when she'll be over 80, many in their 20's will be hard pressed
to follow her :)

Not quite. Ballroom & Latin is one glass.
Monday: Line dancing.
Tuesday: Rock climbing.
Wednesday: Rock & Roll.
Thursday: Rock climbing again.
Friday: Ballroom & Latin.
Saturday: More rock & roll, sometimes.
Even so, pretty impressive.

No. But she *is* a qualified rescue diver, has a current pilot's
license, and has done sky diving and wing walking...

I can't follow her *now*! She dances rings around me, despite being over
twice my age... It makes me kinda sad.

If you at least try to follow her, with time your physical condition
should improve significantly. You can look forward to the day when you
will be able to fully follow her :)

Well, we've been dancing together regularly for over a year now... She
still leaves me in the dust. I suspect a few hours a week simply isn't
sufficient, no matter what intensity.
Think about it: My job involves sitting perfectly motionless for hours
on end. My hobby involves sitting perfectly motionless for hours on end.
And I'm unfit? Didn't see that coming...

I guess her weight is far under your weight. Assume a ratio of 2:1, she
need half the energy to get in movement and more important: she has,
proportionally, more contact surface (grip) to change direction on impulse.
If you were drank, you could probably start moving like her, but the
lack of grip will soon teach you that there was a reason for your brain
to limit your impulse.
And a bit of training might help too: there is the slow muscle fibers
and the quick muscle fibers.
The slow ones are needed for heavy duty (such as supporting your heavy
weight). The quick one are the one she is using. There is no place for a
lot of both... Kind of like a boxing fight between a flying mosquito and
Tyson. Not the same strategy, not the same training.

Plus women have a much lower center of gravity, in general, which makes it
much easier to change direction.
