Of course, you have to tell POV-Ray to close after it is done. Please check
the section "Special Command-Line Options" in the Windows specific part of
the documentation: <http://www.povray.org/documentation/view/3.6.1/603/>

If you execute another program, usually the program from within you do so
will wait until the program it executes terminates. usually you can disable
this feature, which means you have to look for that in the Matlab documentation.

However, it will be a lot more practical to just tell POV-Ray for Windows to
terminate after rendering using the "/EXIT" command-line option.
