What happens if you feel you were racially/sexually/...lly discriminated
against during the selection process? Is there nothing you can do if the
employer won't give you any reason why you weren't employed?

In my employment contract it says that both the employer and the employee
must give at least 3 months notice before terminating the contract. It also
says that under cases of gross misconduct the employer is allowed to
terminate the contract immediately. There's probably 100 other get-out
clauses as well that I haven't bothered to read.

My contract before last (IBM) said that they had to give me one month's notice
but I could not give them notice (and implied I had to work to the end of my
contract). I had to think about that before signing.
What could they do if I left, take me to court? I can't see any court in Europe
upholding that clause, even in the UK.

Typical of the USA, I expect you start lawyering up. I.e., first you
ask, and if they won't tell, or you don't believe them, you have the
lawyer ask.
I don't think it's illegal to refuse to hire someone for no reason at all.
Generally, you need to show that the employer illegally discriminates,
which generally means you have to show they turned down lots of
qualified minorities, rather than just you. Unless, of course, you have
some particular reason to believe it was discrimination, like the
interviewer told you they don't hire <minority> here.
