Actually, it's the beer (and bread) yeast, isn't it? (by the way, the
correct way to write Latin names with with lowercase species part).
S. = Saccharomyces (sugar fungus? sweet mushroom?)
cerevisiae (beer, compare with Spanish "cerveza")
