Actually it *is* scattering media, type 1, color White with a spherical 
density and a color_map from Black to White (or vice-versa, I don't 
remember now). I believe the reason why the steam appears black in some 
areas is because no direct light reaches those media particles, so the 
only light those particles will scatter is the ambient light. Which in 
turn is rather dark. This can be seen near the top, where the same media 
container (one of those with the clearly visible artifacts) is half 
bright and half dark, the dark part being shadowed by the main object.

I also played with the idea of illuminating the steam from within the 
orifices, but the render time would be insanely high.
