How would I go about generating realistic-looking waterfalls in Povray?

That is a good question and one I do not have a ready answer for. I do
have a couple two or three leads for you though so your not entirely out
of luck.

First on the list is a stop by Chris Colefax's page and to download the
Liquid Spray include file. If I recall correctly Chris mentions it might be
possible to use it to generate water falls with:

http://www.geocities.com/SiliconValley/Lakes/1434/

Your second stop should take you to the following link where there are images
of a waterfall accomplished with Pov's media feature. The source files for the
scene are available so perhaps you can learn by their example:

http://www.lahn.de/~sirius/rays/island/

Lastly if you get desperate for inspiration a good browse through the IRTC
entries might bring you across an entry that has a waterfall in it. Often
times the source files for the images presented are included by the person
submitting the image so you can learn by their work. I have no direct links
for this other than http://www.irtc.org

I saw an excellent waterfall a while ago in binaries.images...not sure
what message it was in though. As I remember, it had an odd looking
salmon or trout jumping out of the water.
Anyway, I think the method used was a vertical height field for the
waterfall. Sorry I don't have more details.

Mick Hazelgrove about 3 months ago.. The fish was salmon and odd looking is
appropriatly descriptive. I think Mick used height fields but I don't recall
many of the details either off hand.

Do like Star Wars Ep 1 and cheat. They used pouring sand and a
distance blur to produce it. For lots of reasons that is one of
the most difficult things to model.
