Is there any way to disable the beeping when POVRay
finishes a render? It would be useful to me to know, as I
do alot of work at night with other people in my house.

Render->On Completion->DoNothing/DisplayMessage/ExitPOVRay.
Whatever fits your bill.

And how would you do the same with the text-based Unix version ? I had a
look at the man file but couldn't find an option that matches.

Well, don't know about Unix, but the Win-POV INI file had the following
option under Renderer:
AlertSound=64
Completion=2260
I'm not sure what either is but maybe fooling with it will work? :)
I'm not sure. Try stuff at your own risk!
