Can anyone recommend a good map of Earth that I can wrap around a
sphere? It should not be photorealistic, but rather be a monochromatic
political map like some of these:

Yes, I just recently searched such map.
The projection to use is type 1,
https://commons.wikimedia.org/wiki/File:BlankMap-FlatWorld6.svg
From that page you can download classical bitmap (png) and be happy.

The notes on that page say that the Robinson projection was used. Would
equirectangular projection be better?

Yes, Let me look at it tomorrow, I have one map that really work, that
one looks like the right one, but I need to check the file on the other
computer.
The map for type 1 is typically platecarrée. (which is equirectangular),
even if the ratio is actually irrelevant, because povray put everything
in 0..1 range for both coordinates. At least it gives the same
resolution at the equator for both direction.
But Robinson is round on the sides, So the comments are suspect.

It's the one I used.
It has the correct ratio (2:1) and is equirectangular.
But is not B&W

Oh wow! I should have seen that one first. Even better!
It's pretty easy to turn it into a monochrome version in Inkscape.
