I'd want to simulate reflections on a sphere using spherical camera and
environment mapping but, since I'm using Moray, I can't orient myself with
the coordinate system; I saw a tutorial on this topic some time ago but I
can't find it anymore: any help in this direction would be really
appreciated.

Why in blazes would you want to simulate a reflection...

To convert handedness, toggle the sign bit of your Z axis values.
