Is it possible to periodically save a graphic preview of a render in progress to
a file so that its progress could be monitored using i.e., a web server?

I'm going to say no, but think the mechanism(s) to do so are probably 
already there. I'd do it differently ... suppress the preview window, -d 
option, and use "Shell Command Options" to send a mail message when the 
job was done.

easy enough on linux ... mileage may vary on windows.
