An EXACT definition? Can't help - but for practical purposes, UV mapping
allows you to individually texture each facet of a mesh. The UV refers to
the fact that you are dealing with the vectors (U and V) of the surface of
the object, rather than the X, Y and Z geometery of the standard co-ords.

The real bonus of UV mapping is the, using a prog. like UVMapper, you can
extract an image showing the vectors of a mesh (looks like a wireframe of
your object that's been sat on by an elephant), load that into a paint prog,
and colour it. You can then apply this coloured version to your mesh.

Gilles Tran is very good at this, and there is an excellent tutorial on his
site relating to using UV mapping with exports from Poser.
