Depends on what you want to do. I only use 3.5 for my own projects and 3.1g
for a POV-Ray render farm if they have something to render.

for linux I would suggest 3.1 for now (or megapov), not because there is
anything wrong with linux 3.5, its just that there is sometimes a gap
between 3.5 betas leaving you without a working copy

You should start with the most recent final release version which is 3.1g.
It is never a good idea to start with beta version of any program as it
would be impossible to tell for you as new user if something is your own
mistake or a bug.  Consequently, it would be very frustrating to use the
beta version.

Of course if you learn 3.1g, then you will have many things to relearn with
3.5! I personally have found the beta (late in development) to be very
stable for nearly all of what I need to do (others could certainly
disagree).
