Where would I find easy-to-understand examples of what can and cannot be
done with height fields? My results are unsatisfactory up till now: lots of
black dots and very little smooth hills and valleys.. :(

Just to get an idea how versatile HF's can be check out the gallery
at the Leveller home page - 
http://www.daylongraphics.com/products/leveller/gallery/index.htm

(might take a while for all of the graphics to load but it is worth
the wait)

With the right tools, and a little understanding of the process, just
about anything is possible where HF's are concerned.

I use the HeightField Lab from John Beale's site.  Just type zero 200 200 for a
200x200 heightfield.  Type gforge and then lpfilter for smooth hills.
