Generally speaking, yes. For the moment though, I can only point you
in the direction of:
http://dictionary.reference.com/search?q=Sapphire
But, there are known Sapphires that are yellow and other various
rare colours, like pink, etc.

I don't believe so. Sapphire is a Hebrew word (I recalled from my old
seminary days, and confirmed via Google.)

"Sapphic" is from the poet Sappho of Lesbos, who I don't believe was Hebrew.
