Taking a bit of a different approach to the topic, rather than making a
minimalist-style image I've decided to go with the concept "space is
minimalist".
This is just an early WIP, and I'm hoping some people who know a bit of
astrophysics can offer some suggestions. I'm not trying to make
something ultra-realistic, I'm more keen to make it interesting to look
at, but I don't know much about what's actually out there so any
suggestions would be welcome.

Cool stuff! Could title it Everything Else.
I had some astronomy at the U of W 24 years ago(!) so maybe I'm at least
partly qualified to make suggestions.
; )
Put a few elliptical galaxies in there, ranging from ovoid to spherical.
Make some of the spirals the barred kind. Perhaps a few dots representing
quasars. You could probably go wild with shapes of all kinds really, like
the famous antenna galaxy, whirlpool, etc.
Wish I could remember the relative quantity of each type, but even after
searching for the answer I can only guess it is the spirals that are most
numerous, next ellipticals, then irregulars and others. I thought
ellipticals were, but maybe that's by mass instead(?).
What you have now looks pretty good but maybe the edge-on spirals are too
thick. They get most of their visual thickness from the over-exposure and
from older stars in the halo around the centers. Globular clusters exist in
large number there, too.

already.

One thing I do know about spiral galaxies is that they only have two
arms. There are a few galaxies that look like they might have more, but
it's probably an illusion.
We don't understand why galaxies have spirals, but it is conjectured
that the dual nature of the spiral might originate from some compact
body that emitted two powerful jets in opposite directions.

Well the spiral pattern is about the only thing in that picture that I
have researched, apparently there are many arms on the milky way:

Though the thing I haven't got is the way that the arms are incomplete,
so some start halfway out.

Spiral galaxies comonly have more than 2 arms, and they often split into more arms.
