I have shot about 1Gb of photons, the shadows /
reflection seems very accurate, but despite dispersion
(and a rather dispersion_samples setting) the highlights
do not show color, except when pointing at the camera.
How so? ( I'm using 3.5 for windows... time to upgrade?)

Nice! What would be the source of the color then? Your light looks white or
perhaps vaguely blue. The only time I've seen much color in prisms is when
they are optically active and the light is polarized. Now make POV do that!

The light going through the prism should normaly
disperse (the glassy material is not perfectly straight,
there is a small warping in its normal, that should
accentuate the effect.)
The color seems to vary with the photon density.
At lower density, more color shows. But it's also
much granier.

Why are you using caustics? Normaly, when you sue photons, you don't use caustics. In
fact, you drop
the fake caustics to replace them with true ones.

Sorry, I'm new to povray and I use a modeler. I have been messing around
with photons and glass and was wondering what the photon block or code was
that you added to each object.
This what I have managed to make

With comments:
photons{target//enable the object to receive and interact with the photons
refraction on//enable photons refraction for that object
reflection on//enable photons reflection for that object
collect off// disable showing the photons effect from other objects
//usefull for mostly transparent or highly reflective objects
}
The default are:photons{target off refraction off reflection off collect on}
In glassroom6.bmp, you need more photons: reduce the spacing OR increase the count.
I see much facing, you need to set your meshes to a finer setting.
